The Shiitake mushrooms are loving the cooler weather and shorter days. We’re bringing the harvest to Webb City Farmers Market on Saturday. The mix of the strains that we grow are Miss Happiness, Bolachka and Native Harvest. A wonder to grow and a delight to eat!
Here’s another simple tasty way to prepare Shiitakes. This recipe is an adaptation of one from our spawn supplier, Field and Forest Products. Enjoy!
Cream of Shiitake Soup
Serves 4
2 cups Shiitake, chopped
1/4 cup chopped onion
2 cups water
4 Tbsp. butter
3 Tbsp. flour
2 cups light cream or milk
Remove the tough stem from the mushrooms and save for stock. Sauté the chopped mushrooms and onion together with the butter until tender. In another pot, combine 2/3rds of this mixture with the water, simmer 20 minutes. While mixture simmers, heat the remaining 1/3 mushroom mixture in a saute pan, sprinkle flour on the top, and sauté for several minutes. Slowly add cream or milk and cook until the mixture thickens. Gently add to the simmering water and mushroom mixture and heat through. Season to taste.
