What to do with that cabbage in your CSA box…
I was lucky to be able to attend a Lacto-Fermentation presentation by Dan Kuebler at the 2016 Midwest Winter Production Conference. I learned that fermentation is a natural preservation method that has been around for 2000+ years. It is preferable to canning because it produces and preserves the beneficial live cultures that enhance our intestinal flora. It also increases the nutrient content and digestibility of the vegetables. Simple ingredients, easy to make, and best of all, it tastes great!

Fresh, Locally Grown Baby Ginger
If you haven’t tried baby ginger you are in for a treat. The baby ginger harvest has just started here at OakWoods Farm. Fresh locally grown baby ginger is very different from the mature ginger that you purchase at the store. The beautiful pink and cream colored rhizomes are very tender and mild; there is no need to peel it, you can simply chop and use. In contrast, mature ginger has a tough skin, and fibrous center and is very strong but stores well.

CSA Pick Up: Week 11 of 26
Hello Farm Fans,
A little bit of a salsa kit this week. When I prepare salsa it’s always some of this and some of that. It never turns out the same way twice! So many options. I would love to hear how you prepare yours. For those of you that have opted out of the hot peppers, we are substituting Carmen Italian Peppers which are good in a salsa too! Just not hot.

Ginger and Turmeric at OakWoods Farm
The Ginger and Turmeric are absolutely thriving under Doug’s gentle attention. Although we have grown Ginger before, Turmeric is a new crop for us. It’s beautiful… We are excited about the harvest! Both are tropical plants with tremendous health benefits. And, we treat them with special care. Organic, disease free rhizomes from Hawaii are sprouted indoors on heat mats in our chilly weather in March and April! This year, they are planted out in High Tunnel 2 in June when the soil is nice and warm. By planting in a high tunnel, we expect to extend the harvest season of fresh, local Baby Ginger and Turmeric for you well into November and December. I’ll be sure to let you know when we expect to start the harvest.

And… there are always the goats! The lady cows are also starting to calve so we expect a full farm!

Currently, there are also late season Tomatoes, Peppers and Eggplant growing in our fall high tunnel. I know that it seems crazy to be thinking about fall but farmers are always planing for the next harvest season. In addition to our current summer season produce, we expect to add lots of fresh, local produce to kickoff of the Winter Market at Webb City Farmers Market this fall!
July 1 Pick Up: Week 9 of 26 Weeks
Dear Friends,
It’s week 9 of 26 weeks. And as usual this time of year the weeds have kicked our butts! While rescuing the herb garden this week from weeds, I was pleasantly surprised to discover some really nice basil plants. So you will have basil to enjoy with your tomatoes this week. We love fresh Caprese Salad, alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. Drizzle the salad with extra-virgin olive oil and season with salt and pepper, to taste. Try it with Terrell Creek Artisan Goat Cheese available locally at Webb City Farmers Market and Oak Street Natural Market. Bon Appetite!
Other than weeding, we are seeding, transplanting, harvesting & trying to stay on top of the daily & weekly tasks of running the farm. And the rains are welcomed!

What to do with that Rhubarb continued…
Dear Members,
It’s week 6 of 26 weeks. We’ve been crazy busy the past couple of weeks with transplanting, weeding, weeding, weeding, harvesting & trying to stay on top of the daily & weekly tasks of running the farm. The weather has been wonderful although we experienced a heat index temperature of 112 this week! Tomatoes are ripening though, get ready… And did mention weeding?

What to do with that rhubarb…
Here’s an idea shared by CSA members Ron and Mary. They are avid and creative cooks and I’m always interested in trying their suggestions. This is simply greek yogurt, strawberries, Rhubarb Chutney (Martha Stewart), and almonds.
